Off I popped to Holland and Barret to get some wheat free oat cakes and some Greek yogurt. The result of my mango dessert experiment was frankly, delicious and as a bonus it is guilt free!
You will need:
1 x Large Mango
1/2 Tub of Greek Yogurt (don't use low fat, it's bad for you!)
1 Tsp of Coconut Oil
2 Tbsp of Agave or Manuka Honey
7 Nairns Oat Cakes (these come in 4 packets of 7 biscuits)
1 Tsp ginger paste or 1Tsp ginger powder
1) Mash up the mango in a food processor until it looks a little like this...
2) Melt the coconut oil in a large bowl, then add your smashed up oat cakes and ginger paste. Once you have mixed this together, press your oatcake base into your chosen receptacle.
If you have an especially sweet tooth I would recommend adding some honey to the oatcake base, or replacing the ginger with vanilla.
